Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14 oz) crushed or diced tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 9 oz cheese tortellini (fresh or frozen)
  • 3/4 cup heavy cream
  • 2 cups fresh spinach or kale
  • Grated Parmesan cheese (for serving)
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add onion, carrot, and celery. Cook for about 5 minutes until softened.
  3. Stir in garlic and tomato paste. Sauté for 1 minute.
  4. Add crushed tomatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil, then reduce to a simmer for 10–15 minutes.
  5. Add tortellini and cook according to package directions (5–7 minutes).
  6. Stir in heavy cream and spinach. Simmer until greens are wilted and soup is heated through.
  7. Taste and adjust seasoning as needed. Serve with grated Parmesan and fresh herbs.
