Ingredients

  • 2 large sweet onions
  • 6 mozzarella cheese sticks or block mozzarella cut into strips
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 tbsp milk
  • 2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Peel and slice onions into ½-inch thick rings. Separate into pairs with a smaller ring inside a larger one.
  2. Cut mozzarella to fit snugly between the onion ring pairs and press together to secure.
  3. Freeze the stuffed rings for 1–2 hours until solid.
  4. Prepare three bowls: seasoned flour (salt and pepper), beaten eggs with milk, and breadcrumbs with garlic powder and paprika.
  5. Coat each frozen ring in flour, dip in egg mixture, and press into breadcrumbs. Repeat for a double coating.
  6. Heat oil to 350°F (175°C) in a deep pan. Fry rings in batches for 2–3 minutes per side until golden brown.
  7. Drain on paper towels and serve immediately while hot and melty.
