Ingredients

1 lb breakfast sausage (chicken or turkey)

1 bag (26 oz) frozen hash browns (shredded or diced)

2 cups shredded cheddar cheese

1/2 cup chopped onion (optional)

1/2 cup chopped green bell pepper (optional)

12 large eggs

1/2 cup milk

1/2 tsp salt

1/2 tsp black pepper

Nonstick cooking spray or butter for greasing

Instructions

In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat.

  1. Lightly grease the inside of a 6-quart crock pot with nonstick spray or butter.
  2. Layer half of the hash browns, sausage, onions, peppers, and cheese in the slow cooker. Repeat the layers with the remaining ingredients.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  4. Pour the egg mixture evenly over the layered ingredients in the slow cooker.
  5. Cover and cook on low for 7–8 hours or on high for 3–4 hours, or until the eggs are set and cooked through.

Serve warm and enjoy!

Notes

Swap in beef or chicken for sausage if desired.
