Ingredients

  • 45 apples (mix of tart and sweet), peeled, cored, and thinly sliced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1 tbsp lemon juice
  • 1 tbsp all-purpose flour (for filling)
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1 1/4 cups all-purpose flour (for crust)
  • 1/2 tsp salt
  • 35 tbsp ice water

Instructions

  1. Let cold butter sit while preparing the apples.
  2. Preheat oven to 375°F (190°C).
  3. In a bowl, toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and 1 tbsp flour until coated.
  4. On a floured surface, mix flour and salt. Cut in butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  5. Add ice water gradually, mixing until dough just comes together.
  6. Roll dough into a ¼-inch thick circle and place on a parchment-lined baking sheet.
  7. Spoon apple mixture into the center, leaving a 1-inch border.
  8. Fold the edges of the dough over the filling, pleating as needed to form a rustic shape.
  9. Dot apples with a few small butter cubes.
  10. Bake for 40–45 minutes, until crust is golden and apples are tender.
  11. Cool slightly before slicing to allow juices to settle.
