Instructions
Preheat the oven to 375ºF and lightly spray a 9×13-inch baking dish with cooking spray.
Cook the jumbo shells just until al dente, drain them, and set them aside to cool slightly.
In a large bowl, combine the shredded chicken, cottage cheese, cream cheese, sour cream, Parmesan, 1 cup of mozzarella, and dried parsley. Mix until well combined.
Gently stuff each pasta shell with the chicken-cheese mixture and arrange them in the prepared baking dish.
Pour Alfredo sauce evenly over the shells, ensuring each is coated.
Sprinkle the remaining 1 cup of mozzarella over the top.
Bake uncovered for 30–35 minutes, until the cheese is bubbly and golden.
Let rest for a few minutes, garnish with extra parsley if desired, and serve warm.
