Ingredients

  • Cooked brisket, sliced or shredded
  • Barbecue sauce (your favorite variety)
  • Sliced cheese (such as cheddar, Monterey Jack, or pepper jack)
  • Soft sandwich buns or rolls (brioche, potato rolls, or kaiser rolls)
  • Butter (softened, for toasting buns)
  • Optional toppings: pickled jalapeños, sliced red onion, fresh cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If using leftover brisket, warm it gently in a skillet or in foil with a splash of beef broth until heated through.
  3. Split the buns and lightly brush the cut sides with softened butter. Place on a baking sheet and toast in the oven for about 5 minutes, until lightly golden.
  4. While buns toast, toss brisket slices with barbecue sauce until evenly coated.
  5. Remove buns from the oven and place the bottom halves still on the baking sheet. Pile each bottom with saucy brisket.
  6. Top each brisket-layered bun with 1–2 slices of cheese, then cover with the top bun.
  7. Return sandwiches to the oven and bake 5–7 more minutes, or until cheese is melted and everything is heated through.
  8. Remove from oven and add optional toppings like pickled jalapeños, sliced onions, or cilantro. Serve immediately.

Notes

  • Spicy kick: Use pepper jack cheese and add sliced jalapeños or hot sauce.
  • Coleslaw topping: Add a scoop of creamy or vinegar-based coleslaw on top for crunch and tang.
  • Tex-Mex twist: Sprinkle with chopped cilantro, diced avocado, or pico de gallo.
  • French dip style: Serve with a side of warm beef au jus for dipping.
  • Different cheeses: Swap cheddar for smoked gouda, provolone, or even Brie for a gourmet touch.
  • For storage, keep leftover brisket and cheese separately from buns in airtight containers in the fridge for up to 3 days. Reheat in the oven at 350°F for about 10 minutes.
