Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (plain or Italian-style)
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 2 tbsp chopped fresh parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 cup shredded mozzarella cheese for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, combine ground chicken, breadcrumbs, parmesan, minced garlic, egg, milk, parsley, and all seasonings.
  3. Mix gently until just combined to avoid overmixing.
  4. Shape into a loaf on the baking sheet or press into the loaf pan.
  5. Top with shredded mozzarella if using.
  6. Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 5–10 minutes before slicing to retain moisture.

  • Add chopped spinach or grated zucchini for extra moisture and nutrition.
  • Use a sheet pan for a crispier exterior.
  • Can be made with ground turkey as a substitute.
