Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (in oil), chopped and drained
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (basil, oregano, thyme)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same pan, add more oil if needed. Sauté garlic for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and Italian seasoning. Cook for 1 minute to release flavors.
  5. Pour in chicken broth, scraping up any browned bits from the pan.
  6. Reduce heat to medium-low. Stir in heavy cream and grated Parmesan, mixing until smooth. Add red pepper flakes if desired.
  7. Return chicken to the skillet. Spoon sauce over the top and simmer for 2–3 minutes to meld flavors.
  8. Garnish with fresh basil or parsley and serve warm.
