Ingredients

  • 2 ripe mangoes, diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced

  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Peel and dice the mangoes. Dice the cucumber and bell pepper, and thinly slice the red onion.
  2. In a large bowl, combine mango, cucumber, bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat.
  5. If desired, add chili flakes or jalapeño for extra heat.
  6. Serve immediately for the freshest flavor.
