Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 2 lemons (zest and 1/4 cup juice)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat together the eggs, granulated sugar, lemon zest, lemon juice, melted butter, yogurt, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, mixing just until incorporated.
  5. In a small bowl, beat the cream cheese with powdered sugar until smooth and creamy.
  6. Spoon a tablespoon of muffin batter into each liner, add a dollop of cream cheese filling, then top with more batter to cover.
  7. Bake for 18–22 minutes, until lightly golden and a toothpick inserted in the muffin (not the filling) comes out clean.
  8. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
