Ingredients

1 large head of cauliflower, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup marinara sauce, preferably low sugar

1½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

½ pound Italian sausage, cooked and crumbled

½ red bell pepper, sliced

½ green bell pepper, sliced

1 teaspoon dried oregano

Instructions

Preheat oven to 400°F (200°C).

Pulse chopped cauliflower in a food processor until it resembles rice.

In a large skillet, heat olive oil over medium heat. Add cauliflower rice and cook for 5–7 minutes, until softened. Season with garlic powder, onion powder, salt, and pepper.

Spread the cooked cauliflower evenly in two round aluminum foil containers.

Top with marinara sauce, spreading evenly.

Sprinkle half of the mozzarella and all the Parmesan over the sauce.

Add cooked sausage, red and green bell peppers, and remaining mozzarella.

Sprinkle dried oregano on top.

Bake for 25–30 minutes, or until cheese is bubbly and golden brown.

Let cool slightly before serving.

Notes

For a vegetarian version, skip the sausage and add more veggies like mushrooms or olives.

Spice lovers can add red pepper flakes before baking.

Try a cheese blend like cheddar or gouda for added flavor.
