Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb fresh green beans, trimmed
  • 4 garlic cloves, minced
  • 4 tbsp butter, divided
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup chicken broth or water
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  3. Sear the chicken breasts until golden and cooked through, about 5-7 minutes per side. Transfer to a plate and keep warm.
  4. In the same skillet, add green beans and sauté until bright green and slightly tender, about 4-5 minutes.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Stir in the remaining butter, lemon juice, lemon zest, and chicken broth. Let simmer for 2-3 minutes.
  7. Return the chicken to the skillet and spoon the sauce over everything. Cook for another 1-2 minutes.
