Ingredients
4 boneless, skinless chicken breasts
1 lb fresh green beans, trimmed
4 garlic cloves, minced
4 tbsp butter, divided
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1/4 cup chicken broth or water
Salt, to taste
Black pepper, to taste
1/4 tsp red pepper flakes (optional)
Fresh parsley, chopped (optional, for garnish)
Instructions
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
Sear the chicken breasts until golden and cooked through, about 5-7 minutes per side. Transfer to a plate and keep warm.
In the same skillet, add green beans and sauté until bright green and slightly tender, about 4-5 minutes.
Add minced garlic and cook for 30 seconds until fragrant.
Stir in the remaining butter, lemon juice, lemon zest, and chicken broth. Let simmer for 2-3 minutes.
Return the chicken to the skillet and spoon the sauce over everything. Cook for another 1-2 minutes.
Garnish with fresh parsley and serve hot.
Notes
Use boneless chicken thighs for a juicier variation.
Add cherry tomatoes with green beans for extra color and flavor.
Stir in a splash of heavy cream for a richer sauce.
