Ingredients

  • 1 lb sea scallops (dry-packed)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • Juice of 1 lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 1 tablespoon chopped fresh parsley (optional)
  • Lemon wedges (for serving)

Instructions

  1. Pat the scallops dry thoroughly with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add scallops in a single layer without crowding and sear for 2 minutes per side until golden and opaque. Transfer to a plate.
  4. Reduce heat and add butter to the skillet. Once melted, stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add lemon juice and zest, stir, and let simmer briefly.
  6. Return scallops to the skillet, tossing gently to coat in the sauce and warm through.
