Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp gochujang (Korean chili paste)
  • 3 tbsp soy sauce or tamari (for gluten-free)
  • 2 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar or lime juice
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • 46 soft hamburger buns or slider rolls

Instructions

  1. Heat sesame oil in a skillet over medium-high heat. Add chopped onion and sauté until translucent, about 3–4 minutes.
  2. Stir in garlic and ginger. Cook for 1 minute until fragrant.
  3. Add ground beef. Cook until browned and no longer pink, breaking up with a spoon. Drain excess fat if needed.
  4. Stir in gochujang, soy sauce, brown sugar, and rice vinegar. Simmer for 5–7 minutes until thickened and flavorful.
  5. Adjust seasoning to taste with more gochujang, soy sauce, or sugar if needed.
  6. Spoon beef mixture onto toasted buns. Garnish with green onions and sesame seeds.
  7. Serve immediately and enjoy.

Notes

  • Use ground pork or turkey as an alternative to beef.
  • Add diced bell pepper or shredded carrots for extra veggies.
  • Top with kimchi, slaw, or pickled radishes for crunch and brightness.
  • Melt cheese on buns for a creamy fusion twist.
  • Serve over rice or noodles for a deconstructed sloppy joe bowl.
