Ingredients

  • 1 lb ground beef (80/20)
  • 3 cups broccoli florets (fresh or thawed frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream or unsweetened almond milk
  • 1/4 cup beef broth or water
  • 1 tbsp olive oil or butter
  • 1 tsp Italian seasoning or dried herb blend
  • Salt and pepper to taste
  • Optional: 1/4 tsp crushed red pepper flakes

Instructions

  1. In a large skillet over medium heat, heat oil or butter. Sauté diced onion for about 3 minutes until translucent.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add ground beef, season with salt, pepper, Italian seasoning, and red pepper flakes if using. Cook until browned and cooked through. Drain excess fat if needed.
  4. Add broccoli and beef broth to the skillet. Cover and steam for 5 minutes, until broccoli is tender-crisp.
  5. Reduce heat to low. Stir in cream cheese until melted.
  6. Pour in heavy cream and add shredded cheddar. Stir until everything melts into a smooth sauce.
  7. Adjust seasoning to taste and serve warm. Top with extra cheese, parsley, or green onions if desired.

Notes

  • Use ground turkey or chicken for a lighter option.
  • Swap in cauliflower or add bell peppers for variety.
  • Use Monterey Jack, pepper jack, or gouda for cheese variation.
  • Mix in crumbled cooked bacon for extra flavor.
  • Store in fridge for 3 days; reheat gently with broth or cream if sauce thickens.
