Ingredients

  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1 small onion, chopped
  • 4 cups broccoli florets (fresh or frozen)
  • 3 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 4 oz cream cheese
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and garlic, and sauté until softened and fragrant.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add broccoli florets and cook until tender, about 10–15 minutes.
  5. Stir in heavy cream and cream cheese, and mix until smooth and well combined.
  6. Use an immersion blender to blend part or all of the soup to desired consistency.
  7. Stir in shredded cheddar cheese until melted and smooth.
  8. Season with salt, pepper, and a pinch of nutmeg if using.
  9. Serve hot, garnished with extra cheese if desired.

  • Use a mix of sharp cheddar and gouda for deeper flavor.
