Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled (divided)
  • 1 oz sugar-free ranch seasoning mix
  • 1/2 cup chicken broth or water
  • Optional: 1/2 tsp garlic powder, 1/2 tsp onion powder, chopped green onions for garnish

Instructions

  1. Place chicken in the crock pot. Season with salt, pepper, garlic powder, and onion powder (if using).
  2. Spread softened cream cheese over the chicken.
  3. Sprinkle ranch seasoning evenly over the top.
  4. Pour chicken broth or water around the edges of the crock pot.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  6. Stir in shredded cheddar and half of the crumbled bacon. Cook until cheese is melted and incorporated.
  7. Shred the chicken with two forks and stir it back into the creamy sauce.
  8. Serve topped with remaining bacon and chopped green onions if desired.
