Ingredients

For the cauliflower:

1 medium head cauliflower, cut into florets

1 tbsp olive oil (or avocado oil)

Salt and pepper, to taste

½ tsp onion powder (optional)

¼ tsp red pepper flakes (optional)

For the garlic cheese sauce:

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 tbsp unsalted butter, melted

2 cloves garlic, crushed

For garnish:

Fresh parsley, chopped

Extra Parmesan cheese

Additional red pepper flakes (optional)

Instructions

Preheat the air fryer to 375°F (190°C).

Cut cauliflower into evenly-sized florets. Place in a large bowl.

Toss with olive oil, salt, pepper, onion powder, and red pepper flakes (if using).

Place cauliflower in a single layer in the air fryer basket. Air fry for 12–15 minutes, shaking once, until golden and crispy.

Meanwhile, in a small saucepan over low heat, melt butter. Add garlic and sauté for 30 seconds. Remove from heat and stir in mozzarella and Parmesan until melted.

Transfer crispy cauliflower to a large bowl. Pour garlic cheese mixture over the top and toss to coat evenly.

Garnish with chopped parsley, extra Parmesan, and red pepper flakes if desired. Serve hot.

Notes

For best crispiness, avoid overcrowding the air fryer basket. Cook in batches if needed.

Adjust the spice level by adding chili flakes or your favorite hot sauce.

Swap in cheddar, feta, or goat cheese for a flavor twist.

Customize with extra seasonings like paprika, lemon zest, or garlic powder.

Great as a side dish, snack, or salad topping.
