Ingredients

  • 34 lb beef chuck roast
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup dry red wine
  • 1 (28 oz) can crushed tomatoes
  • 1 cup beef broth
  • 2 bay leaves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear the roast on all sides until browned. Remove and set aside.
  4. Sauté onion, carrots, and celery until softened, about 5 minutes.
  5. Add garlic and tomato paste; cook for 1–2 minutes.
  6. Pour in red wine, scraping the bottom of the pot to release browned bits.
  7. Stir in crushed tomatoes and beef broth. Add bay leaves, rosemary, thyme, and red pepper flakes (if using).
  8. Return roast to the pot, cover with lid, and transfer to the oven.
  9. Braise for 3 to 3½ hours until the meat is fork-tender.
  10. Remove roast, discard bay leaves and herb stems. Simmer sauce to thicken if needed.
  11. Shred the beef and return it to the sauce. Serve hot.
