Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 8 oz fettuccine or linguine
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh basil or parsley
  • Salt and pepper to taste
  • 1 tsp lemon juice (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Season shrimp with salt and pepper. Sear for 2 minutes per side until pink. Remove and set aside.
  4. Add shallot and garlic to the skillet; sauté until fragrant and translucent.
  5. Stir in sun-dried tomatoes and red pepper flakes if using.
  6. Pour in chicken broth to deglaze the pan, scraping up any browned bits. Let reduce slightly.
  7. Add heavy cream and bring to a simmer. Stir in Parmesan cheese and cook until sauce thickens.
  8. Return shrimp to the skillet and add cooked pasta. Toss to coat in the sauce.
  9. Garnish with fresh basil or parsley and a squeeze of lemon juice, if desired.
  10. Adjust seasoning with salt and pepper. Serve immediately.
