Ingredients

  • 1.5 to 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup salsa verde (jarred or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions

  1. Place chicken breasts or thighs in the Instant Pot.
  2. Pour salsa verde over the chicken and sprinkle with garlic powder, onion powder, cumin, salt, and pepper.
  3. Close the lid, set valve to “Sealing,” and pressure cook on High for 12 minutes.
  4. Let pressure release naturally for 5 minutes, then quick release the remaining pressure.
  5. Open lid and check for doneness. Shred the chicken in the pot using two forks.
  6. Stir in lime juice and let the chicken soak in the juices for a few minutes.
  7. Garnish with chopped fresh cilantro if desired. Serve hot.
