  • 4 large eggs

  • 23 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 325°F (165°C) and grease and flour a bundt or loaf pan.
  2. Cream butter and sugar in a mixing bowl until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Add dry ingredients to creamed mixture alternately with buttermilk.
  6. Stir in vanilla extract, then fold in coconut, pecans, and strawberries.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 60–75 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
  10. For glaze, beat cream cheese until smooth. Add powdered sugar and milk, and mix until drizzle consistency. Drizzle over cooled cake.
