Ingredients

  • 2 boneless, skinless chicken breasts
  • 23 tablespoons Cajun seasoning (plus extra to taste)
  • 2 tablespoons olive oil or butter
  • 12 oz pasta (penne, fettuccine, or choice)
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Season chicken breasts generously with Cajun seasoning.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, sauté sliced red bell pepper for 2–3 minutes until slightly softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream, scraping up browned bits from the pan.
  6. Stir in Parmesan cheese until sauce is smooth and creamy. Season with additional Cajun seasoning, salt, and pepper to taste.
  7. Add cooked pasta to the skillet, tossing to coat in sauce.
  8. Slice chicken and arrange over pasta. Garnish with fresh parsley before serving.
