Ingredients

  • 23 lbs boneless or bone-in chicken thighs, breasts, or drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar or apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated or minced
  • 1 tbsp sesame oil
  • Optional: chopped green onions, crushed red pepper flakes, grilled pineapple slices

Instructions

  1. In a bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, vinegar, garlic, ginger, and sesame oil.
  2. Place chicken in a resealable bag or shallow dish. Pour marinade over the chicken, cover, and refrigerate for at least 2 hours or overnight.
  3. Preheat grill to medium-high and oil the grates.
  4. Remove chicken from marinade (reserve some if desired) and grill for 6–7 minutes per side until cooked through and charred.
  5. Baste with reserved marinade during the last few minutes of grilling for extra flavor.
  6. Remove from grill, let rest for a few minutes, and serve garnished with green onions or pineapple slices.

Notes

  • Add chili flakes or sriracha to the marinade for heat.
  • Use orange juice if pineapple juice isn’t available.
  • Oven roast at 400°F for 30–35 minutes as an alternative to grilling.
  • Works well with a grill pan or air fryer.
  • Freeze cooked or marinated chicken for later use.
