Ground Beef Hot Honey Bowl loaded with seasoned taco beef, roasted sweet potatoes, creamy avocado, and cottage cheese. This sweet and spicy high protein dinner bowl is perfect for meal prep and easy weeknight meals.
1 lb lean ground beef
1 yellow onion, diced
1 taco seasoning packet
2 medium sweet potatoes, peeled and diced
2 tbsp olive oil (divided)
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp cinnamon
Salt and pepper, to taste
1 avocado, sliced
1 cup cottage cheese
2 tbsp hot honey
Preheat Oven
Preheat oven to 400°F (200°C).
Roast Sweet Potatoes
Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet. Roast for 40–45 minutes, flipping halfway through, until tender and lightly caramelized.
Cook Ground Beef
In a skillet over medium heat, add remaining olive oil and sauté diced onion until softened (about 3–4 minutes). Add ground beef and cook until browned. Drain excess grease if needed. Stir in taco seasoning and cook according to packet instructions.
Assemble Bowls
Divide roasted sweet potatoes among 4 bowls. Top with ground beef mixture, sliced avocado, and a scoop of cottage cheese.
Drizzle and Serve
Finish with a drizzle of hot honey over each bowl. Serve warm.
Add a squeeze of lime juice for brightness.
Substitute Greek yogurt for cottage cheese if preferred.
For extra heat, sprinkle red pepper flakes on top.
