Ingredients

  • 1.5 lbs chicken tenders (or sliced chicken breasts)
  • 1/4 cup olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme or rosemary (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 2 tbsp plain Greek yogurt (for marinade)

Instructions

  1. In a bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, thyme (if using), salt, and pepper.
  2. Add chicken tenders and coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat grill or grill pan to medium-high heat and lightly oil grates.
  4. Grill chicken 3–4 minutes per side, or until cooked through with nice grill marks.
  5. Let rest for a few minutes, then serve with lemon wedges and fresh herbs.
