Ingredients

  • 1.5 lbs ground lamb
  • 1 medium onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh or dried thyme
  • 1 tsp fresh or dried rosemary
  • 2 tbsp tomato purée (or tomato paste)
  • 1 tbsp Worcestershire sauce
  • 1/2 cup red wine
  • 1 cup chicken or beef stock
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • For the mashed potato topping:
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 2 egg yolks
  • 1/4 cup milk or cream
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Boil potatoes in salted water until tender. Drain and mash with butter, egg yolks, and milk. Season to taste and set aside.
  2. In a hot pan, sauté ground lamb in olive oil until browned, breaking it apart. Drain excess fat if necessary.
  3. Add onions, carrots, and garlic. Cook until soft, then stir in thyme, rosemary, tomato purée, and Worcestershire sauce.
  4. Pour in red wine and reduce by half. Add stock and simmer for 15–20 minutes until thickened and flavorful.
  5. Preheat oven to 400°F. Spread meat mixture in a baking dish and top with mashed potatoes.
  6. Use a fork to create ridges on top. Sprinkle with Parmesan cheese if desired.
  7. Bake for 20 minutes until the top is golden and slightly crisp. Optionally broil for 1–2 minutes for extra browning.

  • Use ground beef instead of lamb for a cottage pie.
  • Make dairy-free by using olive oil and broth in the mashed potatoes.
