Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup whole milk or buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • 1/3 cup brown sugar (for swirl)
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and sugars.
  3. In another bowl, whisk eggs, milk, oil (or butter), and vanilla.
  4. Combine wet and dry ingredients just until mixed—do not overmix.
  5. For the filling, mix cream cheese, 1/4 cup sugar, and 1/2 tsp vanilla until smooth.
  6. For the swirl, mix 1/3 cup brown sugar, cinnamon, and melted butter into a thick mixture.
  7. Fill each muffin cup 1/3 full with batter. Add a spoonful of cream cheese mixture, then top with more batter.
  8. Swirl cinnamon mixture into the top of each muffin using a toothpick or knife.
  9. Bake for 18–22 minutes or until a toothpick inserted into the muffin (not the filling) comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Add chopped nuts to the swirl for crunch.
  • Mix in mini chocolate chips for extra richness.
  • Top cooled muffins with a simple glaze of powdered sugar and milk if desired.
