Ingredients

  • 4 eggs
  • 3/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup chopped pecans, toasted
  • Powdered sugar (for dusting and garnish)
  • 1 tbsp butter (optional, for ganache or greasing)

Instructions

  1. Preheat oven to 350°F and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar until light and fluffy. Add vanilla extract.
  3. In another bowl, whisk flour, cocoa powder, baking powder, and salt. Gently fold into egg mixture.
  4. Spread batter evenly in pan and bake for 10–12 minutes, until cake springs back when touched.
  5. Lay out a clean kitchen towel and dust with powdered sugar.
  6. Immediately invert hot cake onto the towel, peel off parchment, and roll up from the short end with the towel inside. Let cool completely.
  7. Make ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth.
  8. Unroll cooled cake, spread with ganache, drizzle with caramel sauce, and sprinkle with toasted pecans.
  9. Roll the cake back up (without towel) and refrigerate for 30 minutes to set.
  10. Before serving, drizzle with extra caramel and ganache, and garnish with pecans and powdered sugar.
