Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil (for frying)
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken breasts to even thickness and season with salt and pepper.
  3. Set up a breading station: flour in one dish, beaten eggs in another, and a mix of breadcrumbs and Parmesan in a third.
  4. Dredge chicken in flour, dip in eggs, and coat with breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden brown.
  6. Place chicken in a baking dish. Spoon marinara sauce over each piece and top with shredded mozzarella.
