Ingredients

  • 1 cup dry red lentils (soaked for at least 3 hours or overnight)
  • 2 large eggs
  • 1 cup grated cheese (cheddar or any melty variety)
  • 2 tbsp olive oil
  • 1 tsp gluten-free baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup water or milk (as needed for blending)

Instructions

  1. Soak red lentils in water for at least 3 hours or overnight until softened.
  2. Drain and rinse the soaked lentils thoroughly.
  3. Preheat the oven to 375°F (190°C) and grease or line a loaf pan with parchment paper.
  4. In a blender or food processor, combine the soaked lentils, eggs, olive oil, baking powder, salt, garlic powder, onion powder, and water or milk. Blend until smooth.
  5. Fold in the grated cheese and mix until well combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean and the top is golden.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
