Ingredients

  • 4 bratwurst or German-style sausages
  • 1 tbsp oil (for cooking)
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup ketchup
  • 1 tbsp curry powder (plus more for garnish)
  • 1 tsp paprika (sweet or smoked)
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar or honey
  • 1/4 cup water
  • Salt and pepper, to taste

Instructions

  1. Heat oil in a pan over medium heat. Grill or pan-fry bratwursts until browned and cooked through. Set aside.
  2. In the same pan, sauté chopped onion until soft. Add garlic and cook for 1 more minute.
  3. Stir in tomato paste, ketchup, curry powder, paprika, vinegar, sugar, and water. Simmer for 10–15 minutes, stirring occasionally, until thickened. Season with salt and pepper.
  4. Slice sausages into bite-sized pieces. Spoon warm curry sauce over the top and garnish with extra curry powder.
  5. Serve hot with fries, bread rolls, or potato salad.
