Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 lb baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season chicken with salt, pepper, Italian seasoning, and paprika if using.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Transfer to a plate and cover.
  3. Add remaining oil or butter to the skillet. Sauté potatoes with salt and pepper for 10–12 minutes, stirring occasionally, until tender and golden.
  4. Add minced garlic and cook 30 seconds until fragrant.
  5. Reduce heat, return chicken to the skillet, and add butter and Parmesan. Cook 2–3 more minutes, spooning butter over the chicken and potatoes.
  6. Garnish with chopped parsley and serve hot.
