Ingredients

  • 1.5 lbs large shrimp, peeled and deveined
  • 3 cloves garlic, minced (divided)
  • 2 tbsp unsalted butter (for shrimp)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 tsp paprika (optional)
  • 1 tbsp unsalted butter (for sauce)
  • 1 tbsp Cajun seasoning
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Optional: chopped parsley or green onions for garnish
  • 2 lbs Yukon Gold or russet potatoes, peeled and cubed
  • 3 tbsp butter (for potatoes)
  • 1/2 cup milk or cream
  • Salt to taste
  • Optional: 1 clove garlic, minced (for garlic mashed potatoes)

Instructions

  1. Boil potatoes in salted water until tender (15–20 minutes), then drain.
  2. Mash potatoes with butter, warm milk or cream, and salt until smooth. Set aside and keep warm.
  3. Pat shrimp dry, season with salt, pepper, and paprika.
  4. Heat olive oil and butter in a skillet over medium-high. Sear shrimp 1–2 minutes per side. Remove and set aside.
  5. In the same pan, melt more butter. Sauté garlic until fragrant, then add Cajun seasoning and stir.
  6. Pour in heavy cream and simmer to thicken (2–3 minutes).
  7. Stir in Parmesan and lemon juice. Taste and adjust seasoning.
  8. Return shrimp to skillet and coat in sauce. Heat through.
  9. To serve, spoon mashed potatoes onto plates, top with shrimp and sauce, and garnish with parsley or green onions.
