Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 sandwich rolls or 4 slices of bread (ciabatta, baguette, or sourdough)
  • 3 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 46 leaf lettuce pieces (romaine or butter lettuce)
  • 1 large tomato, sliced
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: mayonnaise, Dijon mustard, fresh basil or parsley

Instructions

  1. Mix softened butter with minced garlic to make garlic butter. Set aside.
  2. Season chicken breasts with olive oil, salt, and pepper. Grill over medium-high heat for 6–7 minutes per side, until internal temperature reaches 165°F (74°C). Let rest.
  3. Spread garlic butter on cut sides of the bread.
  4. Toast garlic-buttered bread in a hot skillet or grill pan for 2–3 minutes until golden and fragrant.
  5. Layer lettuce and tomato on the bottom bread slice. Season tomato with salt and pepper.
  6. Add grilled chicken, optionally spreading mayonnaise or mustard on the top slice.
  7. Close sandwich, press lightly, slice in half, and serve immediately.
