Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil or butter (for cooking chicken)
  • 2 tablespoons butter (for sauce)
  • 3 garlic cloves, minced
  • 1/2 cup BBQ sauce
  • 2 tablespoons honey
  • 8 flour or corn tortillas
  • Optional toppings: shredded lettuce or cabbage, pickled red onions, diced avocado, shredded cheese, lime wedges, chopped cilantro

Instructions

  1. Season the chicken with salt, pepper, and garlic powder.
  2. Heat olive oil or butter in a skillet over medium heat. Cook chicken for 5–6 minutes per side until browned and cooked through. Remove and let rest before slicing or shredding.
  3. In the same skillet, melt 2 tablespoons butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add BBQ sauce and honey. Stir and simmer for a few minutes until slightly thickened.
  5. Return chicken to the skillet and toss in the sauce until fully coated and heated through.
  6. Warm the tortillas and fill with the saucy chicken and desired toppings.
  7. Finish with a squeeze of lime and chopped cilantro if desired.

Notes

  • Use spicy BBQ sauce or hot sauce for added heat.
  • Substitute rotisserie chicken for a quick version.
  • Grill the chicken for a smoky variation.
  • Serve in lettuce wraps for a low-carb option or over rice for a taco bowl.
  • Keep tortillas and toppings separate when storing to maintain texture.
