Creamy, cheesy, and packed with tender chicken and veggies—this Forgotten Chicken Casserole is pure comfort food baked to perfection.
4 boneless, skinless chicken breasts
2 cups cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup crushed crackers or breadcrumbs (for topping)
2 tablespoons melted butter
Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
In a large mixing bowl, combine cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until well blended.
Place chicken breasts in the prepared baking dish. Pour the soup mixture evenly over the chicken.
Sprinkle frozen mixed vegetables over the top.
In a separate bowl, mix crushed crackers or breadcrumbs with melted butter. Sprinkle this topping evenly over the casserole.
Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes, until chicken is fully cooked and topping is golden.
Let cool slightly before serving.
For extra flavor, add a pinch of paprika or dried herbs to the soup mixture.
You can substitute cream of chicken soup or use a mix of mushroom and chicken soup.
Use shredded rotisserie chicken to save time—just reduce baking time slightly.
