Ingredients

  • 12 oz smoked sausage or kielbasa, sliced
  • 1 small green cabbage, chopped
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp apple cider vinegar or 1 tsp Dijon mustard (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Add sliced sausage and cook for 4–5 minutes until browned. Remove and set aside.
  3. In the same skillet, sauté onions for 2–3 minutes until softened.
  4. Add garlic and cook for 30 seconds, stirring to prevent burning.
  5. Add chopped cabbage, season with salt, pepper, and red pepper flakes. Cook for 8–10 minutes, stirring occasionally, until tender and browned.
  6. Return sausage to the skillet and stir to combine. Cook for 2 more minutes until heated through.
  7. Finish with a splash of vinegar or a spoonful of mustard for brightness. Serve hot.

Notes

  • Use spicy sausage like andouille or chorizo for extra heat.
  • Mix in potatoes, noodles, or bell peppers for variation.
  • Red cabbage can be substituted but will darken during cooking.
  • Cook cabbage just until tender to avoid mushiness.
  • Leftovers reheat well and taste even better the next day.
