Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • Pinch of salt

Instructions

  1. In a saucepan, combine sugar, corn syrup, and water over medium heat. Stir until sugar dissolves.
  2. Boil without stirring until the mixture reaches 250°F (hard-ball stage) on a candy thermometer.
  3. While syrup cooks, beat egg whites with a pinch of salt until stiff peaks form.
  4. Slowly pour the hot syrup into the egg whites while beating continuously.
  5. Continue beating until the mixture loses its gloss and begins to hold shape (about 5–7 minutes).
  6. Stir in vanilla extract and chopped nuts if using.
  7. Quickly drop spoonfuls of the mixture onto wax or parchment paper and let set for 1 hour.

Notes

  • Make on a dry day to ensure proper setting.
  • Add almond or peppermint extract for a flavor variation.
  • Color the candy with food dye to match seasonal themes.
  • Leave out nuts for a nut-free version.
  • Do not refrigerate as humidity will affect the texture.
