Ingredients

  • 2 cups cooked chicken breast or thigh, shredded or diced
  • 2 cups mixed vegetables (peas, carrots, corn, green beans)

  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream or milk
  • 1/4 cup cream cheese or sour cream
  • 2 tbsp butter

  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup all-purpose flour (for cobbler topping)
  • 1 1/2 tsp baking powder
  • 1/2 cup milk (for cobbler topping)
  • 1 egg (for cobbler topping)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning or dried herbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13″ baking dish.
  2. In a skillet, melt butter and sauté onion and garlic until translucent.
  3. Add mixed vegetables and cook until slightly softened.
  4. Stir in flour and cook briefly. Gradually whisk in chicken broth and cream, simmer until thickened.
  5. Add chicken, cream cheese or sour cream, cheddar, salt, pepper, and herbs. Stir until creamy.
  6. Transfer filling to prepared dish and smooth the top.
  7. In a bowl, mix cobbler topping ingredients: flour, baking powder, salt, melted butter, milk, and egg. Stir until thick batter forms.
  8. Drop batter by spoonfuls over filling. Sprinkle extra cheddar on top.
  9. Bake 25–30 minutes until topping is golden and filling is bubbly.
  10. Let rest for 5 minutes before serving.
