Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups cherry tomatoes or Roma tomatoes, diced

Instructions

  1. Season chicken breasts with olive oil, Italian seasoning, salt, and pepper.

  3. For baking: Preheat oven to 400°F (200°C). Bake chicken for 20–25 minutes or until internal temperature reaches 165°F.
  4. While chicken cooks, mix diced tomatoes, basil, garlic, balsamic vinegar, and a pinch of salt in a bowl to create the bruschetta topping. Let sit to marinate.
  5. Once chicken is done, top each piece with the bruschetta mixture.
  6. If using cheese, add mozzarella and broil for 1–2 minutes until melted.
