  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  5. In a 9×13 inch baking dish, spread a layer of crushed Doritos on the bottom.
  6. Spoon half of the beef mixture over the chips and sprinkle with a layer of cheddar cheese.
  7. Repeat with another layer of Doritos, beef mixture, and cheese.
  8. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  9. Let it sit for 5 minutes before serving.

Notes

  • Use Greek yogurt instead of sour cream for a lighter option.
  • Add black beans, corn, or jalapeños for extra texture and flavor.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat in oven at 350°F for about 15 minutes for best texture.
  • Prepare ahead and add Doritos and cheese just before baking.
