Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/3 cup melted butter or oil
  • 1 tsp vanilla extract
  • Food coloring (red, orange, yellow, green, blue, purple)

Instructions

  1. Preheat the waffle iron and lightly grease it with cooking spray or melted butter.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just smooth.
  5. Divide the batter evenly into six bowls and color each with red, orange, yellow, green, blue, and purple food coloring.
  6. Spoon the batter into the waffle iron in rainbow order (starting with purple and ending with red), layering each color in the center for a bullseye effect.
  7. Close the waffle iron and cook for 3–5 minutes, or until the waffles are golden and crisp.
  8. Carefully remove the waffles and repeat with remaining batter.
