Ingredients

  • 1.5 lbs ground beef
  • 1 yellow onion, chopped
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/4 cup milk (optional, for thinning the soup)
  • 2 cups shredded cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots
  • Chopped parsley or green onions, for garnish (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef with chopped onion. Season with garlic powder, salt, and pepper. Drain excess fat.
  2. Mix the cooked beef with cream of mushroom soup and milk, if using.
  3. Grease the inside of the crockpot. Layer half of the frozen tater tots on the bottom.
  4. Spread the beef mixture over the tater tots and sprinkle with half of the shredded cheese.
  5. Top with remaining tater tots and sprinkle the rest of the cheese on top.
  6. Cover and cook on low for 4–5 hours or high for 2–3 hours, until cheese is melted and tater tots are hot and slightly crispy.
  7. Let sit for a few minutes before serving. Garnish with parsley or green onions if desired.
