Ingredients

  • 2 medium zucchini, thinly sliced (about 1/8 inch thick)
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • Optional: 1/2 tsp dried herbs like oregano or thyme

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Pat zucchini slices dry with paper towels to remove excess moisture.
  3. In a bowl, toss zucchini slices with olive oil, Parmesan, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Arrange slices in a single layer on a parchment-lined baking sheet or in the air fryer basket.
  5. Bake for 20–25 minutes, flipping halfway through, until golden and crispy; or air fry for 10–15 minutes, shaking halfway.
  6. Serve immediately for maximum crispiness.

Notes

  • Add chili powder or cayenne for a spicy version.
  • Swap Parmesan for nutritional yeast for a vegan alternative.
  • Fresh herbs like rosemary or thyme can be sprinkled after baking for aroma.
  • Best enjoyed fresh; store at room temperature in an airtight container for up to 1 day.
  • Reheat in oven or air fryer for a few minutes to restore crispiness.
