Ingredients

6 oz (180 g) salmon, cut into bite-sized pieces

1 tablespoon olive oil

8 oz (220 g) refrigerated tortellini

⅓ cup cream cheese

1 small tomato, chopped

½ zucchini, chopped

½ teaspoon dried dill

2 tablespoons fresh basil, chopped

2 garlic cloves, minced

3 tablespoons mozzarella cheese

Salt and black pepper, to taste

Instructions

Prepare all vegetables and cut the salmon into bite-sized pieces.

Heat olive oil in a large pan over medium heat. Add salmon, dill, tomato, a pinch of salt, and 1 tablespoon water. Cover and cook for 3–4 minutes.

Stir in cream cheese and black pepper. Add another tablespoon of water if needed to loosen the sauce.

Add tortellini directly to the pan and cook in the sauce for 3–4 minutes, or according to package instructions.

Stir in garlic, basil, zucchini, and mozzarella cheese until melted and well combined.

Serve immediately, topped with Parmesan cheese if desired.

Notes

If using dry pasta instead of tortellini, cook it separately in salted water before adding to the sauce.

Tomatoes vary in juiciness—add water gradually to keep the sauce creamy.

Zucchini cooks quickly; add it at the end to keep it tender, not mushy.
