Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley, for garnish (optional)
  • 1 1/2 lbs baby potatoes or Yukon gold, halved or quartered
  • 1 tablespoon olive oil (for potatoes)
  • 2 garlic cloves, minced
  • 1/2 teaspoon paprika (optional)
  • 2 cups broccoli florets
  • 1 tablespoon olive oil (for broccoli)
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons bread crumbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. For garlic potatoes: Toss potatoes with olive oil, garlic, salt, pepper, and paprika. Spread on a baking sheet and roast for 35–40 minutes, flipping halfway.
  3. For broccoli: Toss florets with olive oil, salt, and pepper. Sprinkle with parmesan and breadcrumbs. Roast on a separate pan for 20–25 minutes.
  4. Season chicken with salt and pepper. Heat 1 tablespoon olive oil in a skillet. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  5. In the same skillet, melt butter and sauté garlic and mushrooms until tender. Add cream, Italian seasoning, and bring to a simmer.
  6. Stir in parmesan cheese and cook until thickened. Return chicken to skillet, spoon sauce over, and simmer briefly.
  7. Plate chicken with mushroom Alfredo sauce, roasted garlic potatoes, and broccoli-Parmesan crust.
