Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 4 cups seafood or chicken stock
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup dry white wine (optional)
  • 1 tsp Old Bay seasoning
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 12 oz sea scallops, halved if large
  • 8 oz cooked lobster meat, chopped
  • 2 tbsp fresh parsley, chopped
  • Crusty bread, for serving

Instructions

  1. In a large pot, melt the butter with olive oil over medium heat.
  2. Add the onion, celery, and carrots. Sauté for about 5 minutes until softened.
  3. Stir in the garlic and cook for 1 more minute.
  4. Add the potatoes, stock, wine (if using), Old Bay seasoning, thyme, paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Stir in the cream and milk, simmer gently for 5 minutes.
  7. Add the scallops and lobster, cook for 3–4 minutes until scallops are opaque and tender.
  8. Adjust seasoning as needed, garnish with chopped parsley, and serve hot with crusty bread.
