Ingredients

For the truffles:

  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • Yellow food coloring (optional)

For the coating:

  • 1/2 cup white chocolate chips
  • 1 teaspoon vegetable oil
  • Yellow sprinkles (optional)

Instructions

  1. Prepare the truffle mixture: In a heatproof bowl, combine white chocolate chips, heavy cream, lemon zest, butter, and lemon juice. Microwave in 30-second intervals, stirring in between, until smooth. Add yellow food coloring if desired.
  2. Chill the mixture: Cover the bowl and refrigerate for 2 hours or until firm.
  3. Shape the truffles: Scoop out small portions and roll into balls. Place on a baking sheet lined with parchment paper.
  4. Coat the truffles: Melt white chocolate with vegetable oil. Dip each truffle into the chocolate, allowing excess to drip off. Place back on the parchment paper and sprinkle with yellow sprinkles if using.
  5. Chill and serve: Refrigerate the truffles for another 30 minutes to set. Enjoy these creamy lemon truffles!

Notes

  • You can customize the flavor by adding different citrus zests like lime or orange.
  • For a smoother texture, let the truffle mixture sit at room temperature for a few minutes before shaping.
