Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 12 oz rotini pasta
  • 3 tbsp butter, divided
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook rotini pasta in salted water until al dente. Drain and set aside.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  3. Season chicken with salt, pepper, and Italian seasoning. Sear in the skillet until golden and cooked through. Remove and set aside.
  4. In the same skillet, add remaining butter and sauté garlic for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream, scraping up browned bits from the pan. Simmer until slightly thickened, about 3–5 minutes.
  6. Stir in grated parmesan cheese until melted and smooth.
  7. Add cooked pasta and chicken back to the skillet. Toss everything to coat evenly in the sauce.
  8. Taste and adjust seasoning. Garnish with chopped parsley and serve warm.

  • Add spinach, mushrooms, or sun-dried tomatoes for extra texture and flavor.
  • Substitute rotini with penne, fusilli, or bowtie pasta.
